Creamy Chicken & Vegetable Soup

Nothing says comfort like a bowl of Creamy Chicken & Vegetable Soup!

My version of Creamy Chicken & Vegetable Soup is just that…a classic! No fancy ingredients or cooking techniques. Plus, it has all of the flavors that you have known and loved since childhood – carrot, green bean, celery and parsley. Can't you just taste it now?!

This soup is hearty, pleasing, and perfect to warm your belly on a cold day. Not to mention kid-friendly! I bet your kids would love a thermos full of Creamy Chicken & Vegetable Soup in their lunch pail.

Leftovers are perfect for freezing as well. Pull out a portion, heat slowly on the stove top, and viola lunch or dinner is served.

You can make the healthier version of this by not thickening the broth!  I always love to include options to change it up and make it you own!

INGREDIENTS

8 - 32 oz. (1 qt. each) chicken broth

2 - 3 Tablespoons Fresco “Everyday Blend “ (start with 2 tablespoons add more to taste at the end)

3 cloves of garlic diced

4 cups of cooked chicken chopped into bite-size pieces

1 lb. whole green beans cut into 1” size pieces

2 lbs. carrots cut into ½ “size pieces

6-8 stalks of celery chopped into ½ “size pieces

1 cup of fresh spinach (whole leaves)

¼ cup chopped fresh parsley

1 cup of flour or ½ cup of corn starch (for thickening the broth)

Season with salt to taste

INSTRUCTIONS

Pour chicken broth in large stock pot; add Everyday Blend, garlic, and green beans, bring to a simmering boil for 10 minutes.  Add carrots, celery, spinach and parsley, continue to boil for 10 more minutes.  Finally add Chicken and heat through.  Salt to taste and add more Everyday Blend if needed.

You can stop right here and eat this soup without thickening it.  It is super Healthy and fits most diets!

To thicken soup:

In a medium size bowl, add flour or corn starch and slowly whisk in water until it makes a thin paste without clumps. Pour into soup and stir right away so it does not clump.  Bring to a boil for a couple of minutes until lightly thickened and then turn off heat. 

Serve with Crusty Bread.

*You can add any of your favorite vegetables, pasta or rice.

*This dish can be frozen in small portions for later use.
