Pizza Rolls

My family loves pizza.  Anytime I ask them what they want for dinner I get the same unanimous answer from both the kiddos and my husband, "PIZZA"!  Seriously?  Pizza again?  I myself get bored with the same ole thing.  This recipe is perfect for those nights your family is craving pizza but you want to do something different and yummy.

 Dough Ingredients:

  • 1 & 1/3 cups warm water
  • 1 tablespoon sugar
  • 1 packet active dry yeast
  • 2 tablespoons Fresco Pizza Blend
  • 3 tablespoons olive oil
  • 3 & 3/4 cups flour
  • 1 & 1/2 teaspoon salt

In a large bowl whisk together water, sugar, yeast and Pizza Blend.  Water should be warm, about 105-110 degrees.  If you do not have a thermometer just run your water until it feels warm to touch but NOT hot.  Allow the mixture to sit for 10 minutes and then stir in oil.

In a separate bowl combine the flour and salt with a whisk.  Put the dry ingredients into your food processor (using the plastic mixing attachment) or your stand mixer (using the dough hook).  Pour the yeast mixture into your dry ingredients and mix for about one minute until the dough has come together.

Sprinkle your work surface with a little flour and dump out your dough.  Knead your dough until smooth and elastic.  If the dough is too sticky sprinkle with more flour.  If it appears too dry add a tablespoon of water, one at a time.  (avoid overworking your dough)  Place your dough ball into a large bowl and cover with plastic wrap.  Allow your dough to rise in a warm place.  Your dough should double in size and usually takes about 90 minutes.

Now that the dough is ready it is time for the pizza rolls.

Pizza Roll Ingredients:

Begin with tennis ball size portions of pizza dough.  Roll the dough out on a floured surface.  Smear on a spoonful of Fresco marinara sauce and make a small pile of your favorite ingredients in the center of your dough.  Bring up all sides of the dough and pinch together the seem.  Prepare a baking sheet with cooking spray.  Place your pizza rolls seem side down on the baking sheet.  Cover with plastic wrap and allow the rolls to rise in a warm place for 30-40 minutes.  After the rolls have set brush each one with an egg wash made by whisking together the egg and water.  Sprinkle Fresco Garlic Blend over the rolls and bake in 350 degree oven for 10 minutes.  Serve alone or with a side of the Fresco marinara for dipping.

Tip of the Day

How to rise your dough: I like to turn my oven on warm for just a few minutes then turn it off and put my bowl in there.  You can also run a kitchen towel under very  hot water then wring it out and lay it over the plastic wrap over the bowl.
