PENNEY'S LITTLE ITALY CHICKEN PASTA SALAD
This fresh pasta salad has so many flavors and is loaded with green onions, celery, red bell peppers, black olives, chicken, pasta, then adding cheese and dressing, makes this one tasty pasta salad. INGREDIENTS
DRESSING
1 1/2 CUPS MAYONNAISE
1/2 CUP OLIVE OIL
1/2 CUP RED WINE VINEGAR
2 TSP. SUGAR
2 TSP. BLACK PEPPER
4 TSP. PENNEY'S LITTLE ITALY
WHISK ALL ABOVE INGREDIENTS AND REFRIGERATE.
CHICKEN
1.5 LBS. CHICKEN
OIL
PENNEY'S LITTLE ITALY
SEASON CHICKEN WITH PENNEY'S LITTLE ITALY. SAUTE IN OIL AND SET ASIDE TO COOL. CUT INTO BITE SIZE PIECES.
SALAD INGREDIENTS
1 LB. PENNE PASTA COOKED ALDENTE
3 BUNCHES OF GREEN ONION (CUT INTO 1/4" SLICES)
3 CUPS CELERY CHOPPED
2 RED BELL PEPPERS CHOPPED
1 CUP BLACK OLIVES
BITESIZE COOKED CHICKEN
1 1/2 CUPS PARMESAN CHEESE
1 1/2 - 2 TBL. PENNEY'S LITTLE ITALY
DIRECTIONS
IN A LARGE BOWL ADD PASTA, GREEN ONION, CELERY, RED BELL PEPPER, OLIVES AND CHICKEN, GENTLY TOSS TOGETHER. FOLLOW WITH DRESSING AND MIX WELL. ADD THE FINAL PARMESAN CHEESE AND PENNEY'S LITTLE ITALY, SEASON WITH SALT TO TASTE. STIR AND REFRIGERATE.
