Baked Apple Oatmeal
I have never been a morning person. I don't normally eat breakfast and please don't talk to me until I have had a cup of coffee. However, I have to get two kiddos out the door by 7:15 every morning and I can't send them to school with a cup of coffee as breakfast (can I?).
So, I am constantly looking for nutritional yet convenient breakfast options for my family. This baked oatmeal recipe is perfect for us. I make it the night before and breakfast is ready at 7am with NO fuss. It is delicious served room temperature but also great heated up just a bit.
You can customize the flavors as you please but who doesn't love the combination of apples and peanut butter? No, I am really asking. Does anyone not love to pair crisp apple slices with a big scoop of peanut butter straight out of the jar? This oatmeal combines those yummy flavors and the addition of Fresco Vanilla Apple Pie Spice makes it even better.
Ingredients:
- 2 cups old fashioned oats
- 1 teaspoon baking powder
- 1/4 cup brown sugar
- 1 teaspoon Fresco Vanilla Apple Pie Spice
- 1 & 3/4 cups milk
- 1 egg
- 2 tablespoons REAL maple syrup
- 1/2 cup peanut butter
- 1 large apple diced, with skin on (about 1 & 1/2 cups)
Combine the first four ingredients in a large mixing bowl. In a smaller bowl whisk together the milk, egg and maple syrup. Pour this mixture over the oats mixture. Add in the peanut butter. I find it easier to incorporate if you warm the peanut butter in the microwave to make it a bit more runny. Toss in the diced apples and stir. Pour the batter into a 8x8 greased baking dish and bake for 30-40 minutes at 350*.
