Herbs and Chives Bacon Cheeseball

This past weekend we participated in the Fantastic Food Fest at the Fairgrounds in Indianapolis, Indiana.  We were surrounded by other local businesses that focus on locally grown or produced products and it was a blast.  We saw many familiar faces and met many new customers.

At our booth we were sampling our Herbs and Chives Bacon Cheeseball and let me tell you that EVERY SINGLE PERSON that tasted it asked me for the recipe.  It was a hit so we want to share the recipe with all of you that asked.  If you were not fortunate enough to be there this weekend you will want this recipe too.  It is delicious, easy to put together and beautiful to serve.  Go to the shop page of our website and purchase Herbs and Chives blend so you can make this soon.  I highly recommend you purchase a large or even chef size blend because you will want to make this over and over again.  

Ingredients:

  • 2 8oz blocks cream cheese
  • 2 TBLs sour cream
  • 3 TBLs Fresco Herbs and Chives
  • 2 bunches green onions, chop into 1/4 inch slices
  • 3/4 cup dried cranberries or golden raisins or combination
  • 1 lb bacon fried crispy then crumbled
  • 1/2 cup sliced almonds and chives to cover cheeseball

With mixer, cream together cheese, sour cream and Herbs and Chives until smooth.  With a spoon, mix in onions, dried fruit and bacon.  To get a nice shape line a bowl with plastic wrap, fill the bowl with the mixture and cover with remaining plastic wrap.  Refrigerate until slightly firm, at least 2 hours.  Now for the fancy finished look, mix together chives and almonds, unwrap the now hemisphere shaped mixture and either gently roll or press the almonds/chives into the exterior.  Serve on a platter surrounded by crackers and enjoy.
